Why doesn't my lime tree fruit?

My whole life i hav had to wait and wait for that fruit to get mature before it will even bud out of the tree. I have given up on waiting until they are mature enough to pick because i dont know if they are big enough to eat. The fruit only gets larger with age and i have waited and waited for it to mature.

I have had 5 kids and the big one is 4th so they have their own fruit. All others are pretty small.

I have 5 lime trees.

Two are packed full of fruit and the others i will try to leave for next year.

This year i have all my interest into that fruit. If they cant be used for a juice and eat straight, i can make candies and the other half goes into sauces.

One orange tree has good fruit while the other is almost half bad. i should cut that tree down so i can eat the bad half.

Lime tree i have had to wait over 2 years for good fruit to bud out, i cannot afford to wait anymore.

For now i do as i said in the beginning i try to wait for the fruit to get good. I live in the pacific north of USA where it gets cold, dry and windy. I want good fruit so i can do my part in keeping the acidity at bay. It always produces a lot of fruit and i cannot afford to waste the good part, not too mention it is getting more and more expensive to buy the real lime.

So my question is, how big of a fruit do they have to be to eat or are there ways i can get good fruit with good eating qualities from a lime tree.

Any help would be nice. Thank you for any help you give. I truly enjoy gardening and find this hobby to be very relaxing. I have been talking about a good blog to add into the forums so i hope you dont mind me using this one. Cheers.

Well I think that you will need to figure out what they are good for - if you want to make limes or a lime type juice etc. then I'd look for another use. If they just get tastier with age then you could pick when they are smaller.

Other uses are key lime pie, bars, granitas etc. At that size they are fairly easy to use in pies and bars. Make sure you get them before they are too ripe though or you'll end up with a lot of bitterness.

If you want to make a lime and lime type juice, I'd do it on a small scale and concentrate the juice until you have around 600ml - at that point I would consider what to do with it, limes go rotten in 60 days but the smaller and more concentrated the juice, the longer it will keep. At that point you can dilute it in other juices.

I think it depends on how large the fruits are and whether they are growing on a spur. I have had very small lime fruits on a growing spur and they have been excellent to eat straight away. And I've also had much larger fruits on a non-spur and they have been pretty good too. One important factor is the amount of water and sunshine you give them and how good the roots are.

I live in South East Queensland and am in a similar climate to you. We can't have severe frosts either but they do freeze some of the time.

I grow 6 different species of citrus but I mostly grow small, early to mid-season lime varieties (eg. allies, paradis, genets etc.) I'm still toying with the idea of buying a small limesurge for making juice as
